It’s full of autumnal flavor, yet at the same time a healthy way to start the day! Whole grain oats provide protein and fiber, the perfect backdrop for pumpkin puree and cozy spices. This pumpkin baked oatmeal is pretty simple to whip up. It requires a pretty standard cast of characters when it comes to pumpkin recipes. Here are the main ingredients you’ll need:

Old Fashioned rolled oats: Do not substitute steel cut oats or instant oats! They cook much differently than Old Fashioned. We mixed Greek yogurt, maple syrup and vanilla for a swirled topping (quantities are listed below). If you make this, still add a tiny drizzle of maple over the top: it adds the final flavoring. Glazed pecans or walnuts. Get fancy and use maple glazed pecans or glazed walnuts.Pepitas. Pumpkin seeds work too! Roasted salted have the best flavor.Nut butter. Almond butter, cashew butter, or pecan butter are the best nut butters to go with pumpkin! Peanut butter can overwhelm the flavor.

Can you make this pumpkin baked oatmeal ahead? Kind of! Note that this is not overnight oats: you cannot mix it up the night before and place in the refrigerator! The oats would soak up all the liquid and come out much too dry. If you do want to prep in advance, here’s what to do:

Minimal prep: Mix up the wets and dries separately and store in separate containers (with the wets refrigerated). Pour them together in the morning and bake. OR: Bake in advance: Make up a pan on a Sunday night, then refrigerate it for eating off of throughout the week. You can refrigerate leftovers for up to 1 week, and re-warm them in a 300 degree oven or the microwave.

2 cups Old Fashioned rolled oats (don’t substitute steel cut or instant oats)
½ cup pecan pieces (or chopped pecans)
1 teaspoon baking powder
2 teaspoons Pumpkin Pie Spice (or 1 teaspoon ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground cloves and ¼ teaspoon ground nutmeg)
½ teaspoon kosher salt
1 cup pumpkin puree
1 ¾ cups milk of choice (dairy, almond or oat)
6 tablespoons pure maple syrup
2 tablespoons coconut oil, melted and cooled to room temp
1 tablespoon pure vanilla extract
For serving: 1 tablespoon coconut oil melted with 1 tablespoon maple syrup or maple Greek yogurt*

Preheat the oven to 375 degrees Fahrenheit.*
Butter an 8 x 8″ or 9 x 9″ pan. In a medium bowl, mix together the rolled oats, pecan pieces, baking powder, pumpkin spice, and kosher salt.
Dump the dries into the prepared pan. 
In the same bowl, whisk together the pumpkin puree, milk, maple syrup, melted cooled coconut oil, and vanilla. Drizzle the milk mixture over the oats. Stir lightly with a fork to make everything gets evenly incorporated.
Bake 40 to 45 minutes until the top is nicely golden and the oat mixture has set. Remove from the oven and allow to cool for about 10 minutes.
Before serving, drizzle with maple syrup OR add maple Greek yogurt* plus a drizzle of maple. Store leftovers refrigerated for up to 1 week: reheat in a 300 degree oven or microwave until warm.

Notes

*For the maple Greek yogurt, mix ½ cup Greek yogurt with 1 tablespoon maple syrup and ½ teaspoon vanilla extract. Make sure to still add a small drizzle of maple over the top when serving.

Do you feel like the pandemic has changed the way you look at personal style now?In the last two years, we’ve seen the world really progress towards sustainability and utility. I think we were already headed in that direction and the pandemic only accelerated it. I’ve recently found myself veering towards a more casual aesthetic and you’ll see that as a theme across the capsule collection. I love experimenting with fashion, but I’ve always prioritised comfort. With athleisure, I get to enjoy the best of both. Millennials and Gen-Z are extremely conscious about their choices today. How does this collection fit in with their values?We’ve worked hard to make this collection both sustainable and relevant to today’s consumer. Something that stands out to me are the fabrics themselves. The whole line is 100% ethically produced. We’ve used organic cotton, super-soft tencel made from wood pulp, cottonized hemp and denim specially produced with the brand’s waterless technology. What do you love the most about this capsule collection?We’ve drawn inspiration from the ‘70s classics and given it a modern interpretation. With the silhouettes, I’ve included styles that I personally love and wear often — you’ll spot everything from long varsity jackets, co-ord sweatsuits, crop-tops, all-denim jumpsuits and bralettes. As a fashion writer, watching a fashion show was a large part of my job description. Yet, when I stepped into the Jio World Center yesterday, it had been nearly two years since I had watched a show, IRL, as they say. And let me tell you, nothing beats, the experience.It seemed apt then that Tarun Tahiliani, titled his return to the physical runway in Mumbai, The Reunion, referring to the coming together of the fashion and the artisan community. “Its a celebration of varied art forms, crafts, inspirations from numerous historical monuments and showcasing each one through a small capsule collection. The amalgamation and coming together of all these various communities as one singular collection was why we titled it, The Reunion. Vaqaas MansuriLike many, for Tahiliani this pandemic has brought to light some absolutes. “I truly believe that community is of the utmost importance. We went back to craft as the principal requirement of the hour and in supporting the local artisans. From embroidery to handwork to moving centres across rural India so that these communities could still earn a livelihood and not be relocated or disarticulated was something that we consciously worked towards.” Tahiliani, also created a special film, a digital precursor to the show, that highlighted this spirit of togetherness after 18 months of social distancing.

There could be many reasons behind those sleepless nights and groggy mornings. Besides extra screen time and stress, your diet too plays an important role in your night routine. “Inadequate diet may be associated with poor sleep quality. Studies show that a higher intake of processed food was associated with poor sleep quality, whereas a high intake of fish and vegetables was associated with good sleep quality. Our macronutrient intake also affects the sleep outcomes which was studied in non-shift workers showing that low protein intake (19% of energy from protein) was associated with difficulty maintaining sleep (Tanaka et al),” reveals celebrity nutritionist Ryan Fernando of QUA Nutrition. It is important to eat timely meals and keep a gap of at least 2-3 hours between the last meal and bedtime so that it does not interfere with your sleep. Increased caloric intake during the day is linked to daytime sleepiness. This may result in longer naps during the day thus affecting the night sleep cycle, explains Fernando. The glycemic index of the meal plays an important role in determining sleep onset.In one study, healthy men experienced a shortened sleep onset latency (slept faster) when they were provided with a high glycemic index (GI) meal that was consumed four hours before bedtime, compared with the consumption of a low GI meal, or a high GI meal one hour before bedtime.There is a concept called chrononutrition which combines the health, behaviour, and chronobiology to understand the optimum timing of food intake for health and wellbeing. Practicing regular meal timings tends to align with the circadian clock and prevents the development of metabolic conditions. On the contrary, eating at a time that contradicts our circadian system, such as late night snacking, can  disturb rhythms in clock tissues, such as the liver, and misalign metabolic processes, such as glucose homeostasis, gastrointestinal motility, and digestive processes. Does a high carb diet affect your sleep?A low carb diet and  high carb diet both have effects on sleep outcomes. Carbohydrate manipulation primarily affects REM and non-REM sleep. “This association is mediated by the quality of carbohydrate rather than its quantity of consumption. Poor sleepers with the highest carbohydrate intake consumed more processed, sugar-sweetened beverages and gluten rich foods as compared to good sleepers with a similar high carbohydrate intake,” says Fernando. Research proposes that the effect of a high carbohydrate diet on changes in sleep stages is related to increased serotonin synthesis. Thus it is important to  consume balanced meals with good protein intake to support good sleep quality. How do nutritional deficiencies impact your sleep? Micronutrients intake also affects sleep patterns. “Deficiency of vitamin B1, folate, magnesium, iron, zinc, and selenium is linked with shorter sleep duration. Difficulty falling asleep may be due to lack of micronutrients like vitamin D, alpha-carotene, selenium, and calcium. Scientific trials have shown that nightly intake of nutrients like melatonin, magnesium, or zinc improves sleep quality,” shares Fernando. He adds that consumption of alcohol negatively affects sleep latency and disrupts the normal REM/NREM cycle due to its ability to influence levels of serotonin and norepinephrine. What to eat for good sleep?Fernando says improvements in sleep outcomes are seen after consumption of tryptophan-rich foods, an amino acid present in foods such as milk. Lower tryptophan levels have shown to reduce sleep quality. “Tryptophan competes with other large amino acids to cross the blood brain barrier, where it is converted to serotonin, the precursor to melatonin which is a sleep-promoting hormone,” he says and shares a list of good sleep foods. Almond: Contains active components like melatonin and magnesium and consuming a handful of almonds before sleeping is ideal for a good night’s sleep.Walnut: They are rich in melatonin and about 7-10 walnut halves before bedtime can contribute to early onset of sleep.Kiwi: Contains precursor serotonin and consuming 2 kiwis one hour before bed is said to improve sleep quality.Milk: Contains sleep inducing agent tryptophan, so having a cup of warm milk before bed is associated with longer sleep duration.Chamomile tea: This magic tea has an active component apigenin which when consumed in the form of 1 cup before bed results in good sleep quality and duration.Also read:6 traditional diet rules that could actually be bad for your health7 food and produce businesses that will help you achieve your health goals9 energy-boosting foods and drinks to try when you’re feeling tired and sluggish

For a one-man brand, Bandit’s reach is impressive—in addition to retailing out of stores across India (Goa, Delhi, Mumbai, Jaipur and Kochi), they also have a small presence in Portugal, Croatia and Germany. The idea behind the concept, however, is intensely local. One of Vetoskar’s big moments of inspiration struck on an airplane, when he was flying into Mumbai. The descent carried him over a sea of blue tarpaulin that covers the roofs of shanties around the city’s airport. It was the material that would eventually find its way onto Bandit’s iconic backpacks such as the Kanazawa sling bag —but to begin with, it was especially difficult to source. “There is enough of tarpaulin which is sold in the shops, but these are all pure materials,” he says, “We still haven’t reached a point where I can reach out to a particular source and find it—I have to go to 50 different places, because nobody really understands why you would want the waste part of it.” What’s more, the bags have a lot more elements than just the tarpaulin—the seat belts, which he transforms into lining for the bags, are particularly difficult to source. “In Europe, there are places where you can just call and buy different components, but here in Goa and Mumbai, I am running behind scrapyards, and getting stuff washed, cleaned, then sending it to the factory. The factory doesn’t understand why I am using seat belts when they have regular stuff,” he explains.The challenge Vetoskar describes is the fight of a pioneer navigating uncharted territory and mapping a clear pathway for future generations to follow. Bandit is one of the few sustainable accessories brands in India, and as such bears the responsibility of creating and nurturing not just a new business model, but an entire circular ecosystem. The brand makes no attempt to hide the source material—a derivative of polyester—in fact, it celebrates repurposing it into utilitarian fashion accessories. The tarpaulin’s identifiable rivet and rope are treated as design details, through which customers can hang their trinkets and essentials. “Of course it has to be done ergonomically, but celebration of the material was key—it is like a surprise element,” says Vetoskar, “You have seen this material before, but you didn’t expect to see it in this kind of design.”New lease
